Recipe Time: Marlin & Local Farm Fresh Grilled Veggies Appetizer

We sat down with Morice Lewis, the Executive Chef at Sans Souci to chat all-things summer flavors and recipes, and he helped create the below appetizer that's perfectly Couples, perfectly Jamaica, and perfectly flavored to keep you yearning for "home". 

Marlin & Local Farm fresh Grilled Veggies - Dill, Lemon, Capers, Summer Greens, Yogurt Pesto Dressing

Ingredients

  • Smoked Marlin 150 gr
  • Zucchini Sliced 1/2 each
  • Yellow Squash Sliced  1/2 each
  • Eggplant Sliced 1/4 each
  • Mixed Lettuce 1 cup
  • Chopped Rosemary 2 tbsp
  • Sliced Onions 1 small red onion
  • Pesto 2 tbsp
  • Olive oil 1/2 cup  
  • Natural Yogurt 1/4 cup
  • Salt (To taste)
  • Cracked Pepper (To taste)
  • Capers 2 tbsp
  • Fresh lime 2 each

Method

  • Season the sliced veggies with salt and pepper olive oil, chopped rosemary and grill over open flame
  • Combine yogurt with pesto, add a squeeze of lime juice and cracked pepper to taste
  • Arrange on serving plates - either individual or on a shared platter as shown on the picture
