Recipe Time: Otaheite Apple & Prosecco Sorbet with Honey & Cardamom

Summer is hot-hot-hot, and to stay nice and cool, we are all about the refreshing local flavors in the form of ice cold desserts to help keep us and guests cool. We sat down with Simone Mitchell, Pastry Team Leader at Couples Tower Isle to learn more about her summer go-to dessert, a uniquely Jamaican dessert: Otaheite Apple & Prosecco Sorbet with Honey & Cardamom. Otaheite Apple & Prosecco Sorbet with Honey & Cardamom 
4 cups dice ripe otaheite apples
2 cups sugar syrup (see recipe below)
Juice of 2 limes
8 pods of cardamom (crushed) 
4 table spoons honey
1 cup dry Prosecco
  • Blend apples, cardamom & sugar syrup to a smooth puree
  • Strain
  • Add lime juice, honey & Prosecco 
  • Stir until well combined
  • Chill in the fridge for 1 hour 
  • Freeze in ice cream maker (about 30 minutes) 
  • Place in the freezer and freeze for about 3 hours 

If Othaheite Apple is not available, you can cary the above recipe with Mango / Pineapple / Papaya / Lychee or Passion Fruit 

Sugar Syrup - Basic Recipe

1 lb. granulated sugar
12 oz. water
1 cinnamon stick
1/2 lime (juice and rind) 
  • Combine all above ingredients in a saucepan 
  • Bring to a boil
  • Allow to boil for 5 minute on medium heat whilst continuously skimming any impurities off the top
  • Strain and chill well
