    Itís not just the lively music, mouth-watering food, tropical climate, amazing sunsets or sandy beaches that keep visitors returning to the tropical Caribbean Island of Jamaica; rather some say itís the people. Couples Resorts owns and operates four all-inclusive resorts which provides employment for more than 1,600 staff.   5. Couples Resorts Recipe Time: Escoveitch Fish

    Escoveitch Fish is a traditional Jamaican dish that is enjoyed by both locals and foreigners. The style of cooking originated in Europe/Mediterranean where it was known as ĎEscabecheí and was then brought to Jamaica by the Spaniard. The dish can be described as being pickled since pickling was a great way of keeping food from spoiling in the days of no refrigeration. It is similar to a ceviche with the difference being that the fish is fried and not raw and served with bammy more times than not. ...
