can we use part of our $500 resort credit towards private dinner?

For 2010 the credit applies only to the SPA and gift shop purchases. For 2011 the credit applies to anything charged to the room. So I guess a private dinner would be included.

how did you get a $500 resort credit?

To get the $500. credit you had to book very early. In the past two years they made an offer for 2010 that expired I believe 6/30/09 for the 2010 $500, credit and for 2011 it expired I think 6/30/10.
