Best Off Site Excursions From CSA?

My wife and I will be there in a few days for the second time. Last year we loved the resort so much we only left on the catamaran and snorkeling trips that are included. This trip we would like to do 1 or 2 excursions but wondered which ones to take? Help?

mayfield falls, YS falls or a really cool one they dont advertise is Roaring River...hire a driver for the day and take you alot cheaper than booking at the resort plus youll get to stop whenever wherever you like
