At CN there are several 4 person Hobie Cats - mono-sails (I believe they are "Hobie Wave" models) that guest can take out alone. Also there is one larger dual-trapeze Hobie Cat that, in our experience, a watersports staff member must pilot for you.

Edit - should have mentioned that at CN there is also a small sunfish sailboat that you can take out.
