Jerk is a style of cooking native to Jamaica in which the meat is dry-rubbed, or wet and marinated with a very hot spice mixture. This jerk seasoning is traditionally applied to pork, chicken or fish and is available for purchase at the resort gift shops.
Spicy, tasty, and mouth-watering are just a few words that can be used to describe the experience of adding Jamaican jerk sauce to your meals. 4 oz scallion
4 cloves of garlic
4 oz onion
1 tsp fresh ginger
1 medium scotch bonnet pepper (chili)
1 large sprig thyme
2 oz soy sauce
1 tsp salt
16 oz ketchup
3 oz olive oil
MARINADE: Put all the above ingredients except salt in a food processor & blend.
SAUCE: Add 1 cup of ketchup and about Ĺ - 1 cup of the above marinade. Simmer for 5 minutes & strain. If sauce is too thin, thicken with a little corn starch (mixed with a little cold water). Pineapple juice and Red Stripe Beer (optional)
