Recipe Time: Roasted Pumpkin & Leeks Chowder with Jerk Sausage & Coconut Fritters

Autumn, also known as fall, is one of the four seasons and marks the transition from summer into winter. So what better way to get it going than with Couples Resorts as we share with you a flavorsome all inclusive dish - Cream of Roasted Pumpkin and Leeks Soup with Coconut & Jerk Sausage Fritters. Roasted Pumpkin & Leeks Chowder

Ingredients (for 4 portions):

  • 2 tablespoons olive oil
  • ½ medium size onion (peeled and finely diced)
  • 1 tablespoon fresh ginger (peeled and finely chopped)
  • 3 cloves garlic (peeled and finely chopped)
  • ½ pound pumpkin (peeled and cut into ¼” cubes)
  • ½ stalk leeks, washed and cut into 1 inch pieces
  • small bunch of fresh thyme
  • small pinch red pepper flakes
  • ¼ teaspoon ground cumin
  • 6 cups chicken stock
  • 1 cup coconut milk (unsweetened)
  • Salt & black pepper to taste

Garnish:

  • Coconut Milk
  • Chopped Scallion
  • Freshly Ground Black Pepper
  • Grilled Scallion

Method:

  • Place Pumpkin and leeks on a baking sheet. Add a little olive oil, ½ the fresh thyme, salt and pepper and roast in a 375 degrees pre-heated oven for about 15 minutes.
  • In a heavy saucepan heat the olive oil. Sauté onion, ginger, ground cumin and garlic. Add the roasted pumpkin & leeks. Add the chicken stock, the coconut milk, fresh thyme and the red pepper flakes. Bring to a boil, reduce heat and simmer for about 20 minutes. Remove from the stove, remove thyme sprig and blend in a food processor (blender). Put back on the fire and adjust seasoning with salt and black pepper.


Jerk Sausage & Coconut Fritters

Ingredients

  • 1 tbsp. onion, diced
  • 1 tbsp. tomato, diced
  • 1 clove garlic, chopped finely
  • 2 tbsp. toasted coconut (freshly shredded)
  • 2 tbsp. grilled jerk sausage, diced
  • ¼ cup flour
  • ½ tsp baking powder
  • Salt and pepper to taste
  • 4 tbsp. water
  • 4 tbsp. coconut milk

Method

  • Combine all the above ingredients combine evenly ensure not to make batter too runny.
  • Using a tablespoon, drop into hot oil. Fry until golden brown (about 3-4 minutes, depending on size)
