Staff Spotlight on Jamaican Head/Executive Chefs of Couples Resorts

As Couples Resorts continues to redefine the all-inclusive concept, we are proud to announce the addition of three Jamaican Head Chefs to the family. By no means are they strangers to the Couples Family as all were longstanding standouts that have now been promoted.

As Stefan Spath mentioned recently, “Jamaicans are very talented, proud people who are keen on learning new things. I believe in giving these young people the opportunity to grow and learn the job. I feel that my main purpose for being in Jamaica is to train and guide our local chefs and staff and am proud to say that we have now started to even promote our Executive Chefs from within”. This is now evident at three of the four resorts.

Valentine McKenzie - Couples Tower Isle, formally at Couples Sans Souci and recently named 'Hotel Manager of the Year', by the Jamaica Hotel & Tourist Association (JHTA).

Mr. McKenzie, whose culinary expertise was often praised by guests at Couples Sans Souci, was also a proud member of the coaching team which led the hotel to gold, silver and bronze awards at the 2011 Taste of Jamaica culinary competition.

“Chef Valentine” as he is affectionately worked at Sans Souci for over 12 years, starting as a Room Service Supervisor, progressed to positions of: Palazzina and Casanova Restaurant Chef, Senior Sous Chef, Executive Sous Chef and finally was promoted to Head Chef in 2012.

August 1, 2012, Chef Mckenzie continued his journey and started a new chapter of his book when he joined the team at Couples Tower Isle as Head Chef.

Morice Lewis- Couples Sans Souci

Recently appointed Head Chef at Couples Sans Souci, joined the Family in July 2012. Originally from Church Lincoln, Grange Hill, Morice attended the Grange Hill High School.

From there he went on to Johnson & Wales University Jamaican Hotel & Tourist Association Summer Culinary Institute and received Certificates of Achievement. Morice has also received a Certificate of Competence in NVQ Level IV in Assessment from the Heart TRUST Vocational Training Development Institute in July 2008. Prior to Couples Sans Souci, Morice worked extensively with the Royal St. Kitts Hotel & Casino Hotel as Executive Chef, Couples Negril in various positions ranging from Team Leader to Executive Sous Chef, Beaches Negril as Senior Sous Chef and Couples Swept Away as Executive Sous Chef.

Morice describes himself as being highly self motivated and is passionate about cooking all types of food. In his spare time he enjoys spear fishing, playing basketball and spending time with his family.

Andre Campbell - Couples Negril

Andre has been employed to the company for the past ten years. Andre started out has a team leader at Swept Away and progressed up the ranks where he was promoted to Executive Sous Chef. After transferring to Couples Negril in 2009, he was eventually promoted to Executive Chef since September 2011. His aim is to improve on the selection of food that is produce at Couples Negril with the trendy cuisines of the world and utilize the local flavours’.

Andre, notes that he did all of his training in Jamaica and has a great passion for food. n addition, it overwhelms his heart to see people happy after having a delicious meal. For the future he aspires to become a food and beverage manager .
