Celebrate World Pasta Day with Rasta Pasta from Couples Resorts

Feeling hungry today and wanting to prepare a dish that is simple, versatile and a tasty treat? To help you celebrate World Pasta Day we’re sharing some dishes that you can prepare yourself, or enjoy during your all inclusive Caribbean vacation.

Pasta, as you may know is a type of noodle and is also a staple food of traditional Italian cuisine. It is generally a simple dish, but comes in large varieties because it is a versatile food item. Pasta dishes can be served as a first course meal because the portion sizes are small and simple, and are usually accompanied by a side of meat.

Pasta may also be prepared for light lunches, such as salads, or large portion sizes for dinner. At any of our Jamaica destinations, our talented chefs can quickly prepare a dish made to order. Pasta sauce may vary in taste, color and texture; so when choosing which type of pasta and sauce to mix together there is a general one rule of thumb: sauces like pesto are ideal for long and thin strands of pasta, while tomato sauce mixes well with thicker pastas. Thicker and chunkier sauces tend to cling onto the holes and cuts of short, tubular, twisted pastas; therefore mix an equal portion of thick, chunky sauce and pasta. Also note it’s important that the sauce does not overflow, or drown the pasta. No need to worry if you’re in doubt about which pasta and sauce to choose as the staff at Couples is always willing to guide you in your decision making.

Rasta Pasta

Ingredients
• 1 cup bow tie pasta
• 4 tbs olive oil
• 1 clove garlic, chopped
• 1 small onion, diced
• 1 piece sweet pepper, diced
• Ό cup chopped tomatoes
• 1 cup cooked ackee
• Ό cup calaloo leaves, roughly chopped
• 1 tsp thyme
• 2 tsp basil
• 4 tbs coconut milk
• 1 tbs freshly ground black pepper
• Salt and pepper to taste

Method
• Cook bow tie pasta according to package directions. In a large skillet, sautι garlic, onion and sweet pepper in olive oil
• Add chopped tomatoes, followed by the cooked pasta and cooked ackee, and the remaining ingredients
• Cook for about 5 minutes, remove from flame and serve with Parmesan cheese

Jerk Chicken Pasta

Ingredients
• Ό pound (quarter of box) fettuccine
• 1 clove garlic, chopped
• 1 small onion, diced
• 1 piece sweet pepper, diced
• Ό cup tomatoes, chopped
• Ό cup white wine
• 1 cup cooked jerk chicken strips
• 1 tsp thyme
• 2 tsp basil
• ½ cup tomato sauce
• 1 tbs freshly ground black pepper
• Salt and pepper to taste

Method
• Cook fettuccine according to package directions. In large skillet, sautι garlic, onion and sweet pepper
• Add chopped tomatoes and deglaze with wine
• Add cooked pasta and chicken, and the remaining ingredients
• Cook for about 5 minutes, remove from flame and serve with parmesan cheese
