COUPLES TOWER ISLE HOSTS CHARITY DINNER FOR ANIMAL SHELTER
Repeat guests bid for private dinner and three night stay on online auction
Couples Tower Isle, one of Jamaica’s top all-inclusive Resorts, adopted the Animal House, Jamaica, a non-profit organization operating a shelter just outside Ocho Rios, St. Ann as one of its charities four years ago. The resort has donated a generous portion of the proceeds from its annual charity golf tournament to this cause. In addition, Couples Tower Isle donated for the second consecutive year a private dinner for eight and a three night stay for the annual Animal House online charity auction.
A special couple, Jim & Darcy Fangman from Missouri, USA, repeat guests of Couples Tower Isle since 2003, have twice successfully bid for this special dinner which is sponsored by Couples Tower Isle and prepared by Couples Resorts’ Corporate Executive Chef, Stefan Spath, who himself has adopted two dogs from the shelter. The Fangmans, who are avid dog lovers, also won the bid for a three-night stay at the Resort, with all proceeds going to Animal House.
On a beautiful evening in late July, as the sun began its descent into the Caribbean sea, Jim & Darcy and a small group of their guests from Couples Tower Isle gathered at the fabulous hillside home of Chef Spath for an evening of fantastic food, wine, and music. Guests had their palates teased with hors d’oeuvres of grilled jerk sausage with Scotch Bonnet marmalade, fried breadfruit with pumpkin jalapeno dip and chilled watermelon with feta olives. These were complemented by perfectly chilled flutes filled with a delectable lychee mint fizz.
The stage for the evening’s dinner was the newly renovated grotto-like poolside, with a cascading waterfall in the background. The gastronomic delights began with an appetizer of sugar cane-skewered tempura shrimp with coconut and lemongrass and a ginger sweet and sour sauce served in a halved coconut. This was complemented by glasses of Las Moras Chardonnay and followed by an equally delicious soup of cream of tomato and garbanzo beans with jerk sausage and basil sour cream, and then a sorbet of green apple and rosemary as the palate cleanser. The piece de resistance was the entrée – a Caribbean surf and turf; tamarind-brushed beef tenderloin and garlic-grilled lobster tails, accompanied by a Chianti Classico Italian red. To complete the feast, a decadent dessert of passion meringue pie with watermelon carpaccio and pumpkin seed brittle was served with aromatic Blue Mountain coffee. Chef Spath created a perfect balance of sweet, tangy and refreshing masterpieces, leaving his guests’ taste buds forever grateful.
With stomachs full and satisfied, Darcy Fangman took the time to thank Couples Resorts, and, of course, the very talented Stefan Spath. “It’s absolutely brilliant and we are glad we could turn it into such a wonderful evening,” she said, adding that Maureen Sheridan, who runs the Shelter, “is a special lady with a heart of gold.” The evening ended with her husband Jim displaying his musical ability on the violin, much to everyone’s delight.
