Have made this a Couple of times and everyone LOVES it! I do agree the flavor in Jamaica is slightly different and I am sure it is because the smaller island bananas have such amazing flavor packed into them. Still a great one to make at home and a great addition to anyones recipe book! Thanks for posting it again Randy!!
I find that roasting unpeeled ripe bananas on a cookie sheet in the oven at 350 degrees for about 15-20 minutes, makes the banana flavour more intense. Banana peels will turn blackk when done. Works beautifully for making Banana bread, Banana cake etc. Will never taste as good as eating it at a Couples Resort though!
