Healthy Jamaican Recipes: Veggie Panini and Island Slaw

Happy New Year, Couples family! This time of year is the perfect time to sit back and make those resolutions to help get you back on track after an indulgent holiday season. One way we will be encouraging you over the course of January is by sharing some of our all-time favorite healthy Jamaican recipes that you can make at home to eat healthy AND dream of Couples and Jamaica all at the same time. For the next four weeks we will unveil a new recipe from Corporate Executive Chef Stefan Spath. I had the pleasure of sitting down with Chef Spath to discuss these recipes and hope you will enjoy them as much as I do! You can pin this recipe as well to your own Pinterest board here. Grilled Veggie & Goat Cheese Panini over Coconut Pineapple Island Slaw

Panini 1/2 each red pepper 1/2 each yellow pepper small bunch of stallion 1 portabello muchroom 1 clove garlic 1 small onion 4 tbsp extra virgin olive oil salt and freshly ground black pepper 2 tbsp creamy goat cheese Rosemary Olive Focaccia Finely dice garlic. Slice onion and roughly chop scallion. Place in a bowl. Add all vegetables and season with salt and pepper. Add olive oil and mix. Cover and allow to marinate for 30 minutes (room temperature). Heat grill pan. Place all veggies in the pan and char grill until done. Cut focaccia bread in half. Spread with goat cheese on both sides. Arrange veggies randomly on the bread. Put two halves tether, brush with a little olive oil (from the marinade) and grill bread in grill pan until golden brown and goat cheese starts oozing out.

Island Slaw 1 large carrot - peeled and shredded 1/2 cup shredded cabbage 1/2 cup shredded choco 2 tbsp diced pineapple (fresh) 2 tbsp extra virgin olive oil salt and freshly ground black pepper fresh lime juice (to taste) 1 teasp honey 2 teasp freshly grated coconut Combine all above ingredients and season to taste To serve: Cut Panini in halves and serve over Island Coleslaw and a few salad leaves Then, eat up!
