That's Amore! Pizza Recipe from Executive Chef Stefan Spath

Hi Couples family,

There's a nip in the air as fall is in full swing, and it's the perfect time to bring a bit of Jamaica and Couples Resorts into your kitchen and daily routine. Exectuive Chef Stefan Spath has shared with me one of his favorite fall receipes, a roasted squash, zucchini, bacon & caramelized plantain pizza with ricotta.

Hope you enjoy this pizza recipe as much as I do!

Pizza Crust
2 cups bread flour
1/2 pkt yeast
2 tbsp olive oil
pinch salt & black pepper
3/4 cup warm water

  • combine all dry ingredients.
  • Add olive oil and water
  • Using a hand mixer, combine all ingredients slowly and then knead for about 5 minutes until dough is very smooth and flexible. Add a little more water if needed - or extra flour if the dough is too sticky
  • Brush surface with a little oil. Cover with plastic wrap and allow to proof / rise for approximately 1 hour
  • Push back dough and roll into a ball on your work surface. Dust with a little flour, cover and allow to sit for another 15 minutes (covered)
  • Using a rolling pin or your hands, roll out to a very thin pizza base and place onto an oiled pizza screen. 

To finish
1/2 each small yellow squash and zucchini - sliced lengthwise, brushed with olive oil and grilled on a car grill for about 1 minute on each side
4 strips bacon - lightly grilled
1/2 plantain - pan-fried / caramelized in a frying pan in olive olive oi, then chopped into 1/2” dice
1/2 cup shredded mozzarella
olive oil
fresh thyme
1/2 cup ricotta cheese
salt & black pepper

  • Preheat your oven to 425 degrees Fahrenheit 
  • Brush rolled out pizza dough with olive oil
  • Add shredded Mozzarella and fresh thyme 
  • Add grilled yellow squash and zucchini
  • Add bacon and plantain - make sure all toppings are distributed evenly
  • add dollops of ricotta cheese
  • drizzle a little olive oil over pizza 
  • Sprinkle with a little salt and black pepper 

Immediately bake at very high heat for approximately 5 minutes. Lift up bottom of pizza to ensure it is baked throughout.

Serve immediately. We recommend serving it with a scotch bonnet pepper and garlic infused extra virgin olive oil on the side (for extra heat and flavor).
