Recipe Time: Jamaican Curried shrimp

Hi Couples family,

Are you in the mood to bring Jamaica home with you this week for dinner? We teamed up with the culinary team at Couples Negril to bring you a special how-to demonstration to make your very own Jamaican curried shrimp. Gather up your ingredients, put on some reggae tunes, and turn up the heat in your kitchen as you bring home a taste of Couples and a taste of Jamaica.

• 1 onion diced
• 1 clove garlic
• 4tbsp corn oil
• 1 lb shrimp
• 3tbs curry powder
• 1 scotch bonnet pepper
• 1 stalk scallion
• 1 sprig thyme
• ½ Coconut milk
• Salt –pepper to taste

1. Season shrimp with curry, salt and pepper.
2. Heat pot and add olive oil then add curry powder, garlic, scallion, thyme, hot pepper, onion and allow to sauté for a minute.
3. Add shrimp and stir occasionally for a few minutes, then add coconut milk and allow cooking for about five minutes.
4. Remove and serve.

Jerk Sauce Recipe
• 4 -5 tsp - Jerk seasoning (scotch bonnet pepper )
• 2 tsp - Onion chopped
• 1tsp - Scallion chopped
• ½ tsp - Thyme chopped
• ½ tsp - Garlic chopped
• 1 - Small bottle ketchup
• 1 ½ quart - Pineapple juice
• 1 quart - Soy Sauce about “Lee Perry sauce 1 small bottle or half”
• Whole black pepper corn 10
• 2 tsp - Oil
• 1tsp - Fresh Ginger chopped


1. Heat oil sauté all the chopped ingredients including the jerk seasoning and black pepper
2. Corn until the onions becomes brown, then add pineapple juice, ketchup, lee Perry sauce
3. And soy sauce bring to a boil allow to simmer for 10 to 15 minutes.
