Healthy Jamaican Recipes: Chilled Sweet Potato & Roasted Breadfruit

Hello Couples family, This week we sat down with Corporate Executive Chef Stefan Spath of Couples Resorts and planned out yet another healthy local Jamaican recipe to help keep you on track with your New Year resolutions to eat healthy and perhaps daydream of Couples Resorts and Jamaica while you're at it. The recipe of the week is chilled sweet potato and roasted breadfruit coconut vichyssoise. 

Chilled Sweet Potato & Roasted Breadfruit Coconut Vichyssoise

2 tbsp olive oil 1 large onion - diced 2 cloves garlic - crushed small bunch fresh thyme 1 cub of chopped scallion 1 teasp finely diced ginger 1/2 teasp chopped scotch bonnet pepper 1 cup sweet potatoes 1 cup of roasted breadfruit (in Jamaica we roast the whole breadfruit over an open pimento fire - if breadfruit is not available, replace with regular raw diced potatoes) 1 cup leeks 1 cup coconut milk 1 qt vegetable stock salt and freshly ground black pepper In a heavy saucepan saute onion, garlic, giner, thyme, scallion and scotch bonnet pepper in olive oil for 2 minutes. Add diced sweet potato, breadfruit and leeks and saute for 5 minutes. Add coconut milk and chicken stock and season with salt and black pepper. Bring to a boil, reduce heat and allow to simmer for about 20 minutes. Cool slightly and puree soup. Allow to cool and chill completely (best overnight in the fridge) before serving Vichyssoise in a Calabash bowl. Garish with freshly chopped scallion and serve with toasted pita chips.
